Ichimura Handcut Soba

Ichimura Handcut Soba  is known for traditionally made soba and tempura enjoyed by locals and visitors alike and you can find this famous soba restaurant located at the Izumikoyo 1 T-junction before Kutchan. Ichimura Handcut Soba gets packed quickly especially on weekends in winter with five tables and a Tatami mat room. All the classic soba dishes here are made from originally grown Kitawase buckwheat from nearby Kyowa Town and local pure spring water with the grains hand ground every morning. Water is a critical ingredient for the taste of soba, and the chefs have made a success! Hugely popular is the “Kamo seiro”, a dish in which you dip soba noodles into hot soup with boiled duck meat. The leek and “yuzu”, a popular Japanese citrus flavored soup makes a satisfying delicious meal accompanied with fresh crispy tempura (seafoods or edible wild plants).It’s no wonder that Michelin star chefs visit this “Ichimura” for family lunch on their days off!
