Snow Castle, the in-house restaurant at Hirafu’s newest premier boutique hotel Chalet Ivy, provides a Japanese fine dining experience using fresh Hokkaido seafood and vegetables sourced from their private farm for unrivalled quality, taste and peace of mind.
Snow Castle’s chef is a master sushi chef with extensive experience creating traditional Japanese sashimi and sushi courses which use local ingredients and are tailored for international tastes, using carefully selected local Hokkaido ingredients. His more than 10 years experience at one of the finest Japanese restaurants in Hong Kong have helped him adopt traditional Japanese tastes to the international palate, with flavours that are sure to please all. The care that goes into each dish is displayed in the taste and presentation of the dishes, and truly has to be experienced to be fully appreciated! Each plate is a work of culinary and visual art! Snow Castle is located on the second floor of Chalet Ivy, in a simple, elegant space that’s perfect for relaxed fine dining. The kitchen is visible through a glass wall, where you can see the master at work, the windows look out upon the ski field and village below, and the balcony overlooks the first floor lobby. The wood accents and soft, natural design elements evoke the surrounding Niseko countryside adding to the relaxing atmosphere. As the hotel’s main restaurant Snow Castle is open for breakfast and dinner. Breakfast is buffet style, with both Japanese & Western dishes, is complimentary for hotel guests, and is open to visitors for ¥2,300 yen. Happy hour is from 16:00 – 17:00 and is a great way to relax apres ski. Dinner is served from either 17:30 or 20:00, depending upon your reservation (reservations are required). Snow Castle is located on the second floor of Chalet Ivy on Hirafu’s main street, just steps from the ski lifts and about a 3 minute walk up from the Seicomart convenience store at Hirafu’s main intersection in the centre of the village.
